I'll try to name a few i think maybe haven't been covered here. There are just too many to name really. Half the fun of albums is collecting the artwork.

Santana - Greatest Hits ( Black man with dove in hand)
the Who- Quadrophenia with the original black and white booklet of photos.
Yes - Fragile

Robert Plant- the Principle of moments (Simple yet very pleasing)

The Fleet Foxes - Self titled - a really good album.

The cover is actually a 1559 oil painting depicting Flemmish Proverbs.

Wikipedia has a code that shows what each of the people's actions mean. Pretty fun to look through the album and decode the meanings.

Proverb: She puts the blue cloak on her husband
Meaning: his wife is cheating on him (deceiving him).

I'm surprised no one's mentioned Bat Out Of Hell. The pic of the Extreme album really doesn't do it justice. If you see it in a store sometime take a good look at it. It really is a feat of both depth and simplicity. Pop Life has always just grabbed me. And The Rainbow Children is just plain fun to look at!
