"I shot the Sheriff" originally by Bob Marley, remade by Eric Clapton

"Be thankful for what you got" originally by William DeVaughn (1974), remade by MAssive Attack (1990)

Tori Amos made a nice cover album.

Not exactly a number that began as a "rock song" but by the time Carlos Santana was done with it "Black Magic Woman" belonged to him. Fleetwood Mac went on to sharpen their pencil and create timeless ballads. Has anyone ever covered a Hendrix song, and BETTERED IT?!!! There are some people you don't mess with.

Little Wing covered by 'Derek and the Dominos'. Not Jimi, but to hear Eric and Duane going back and forth ... just a beautiful tune.
 
How's about Midnight Special. Done by CCR, Johnny Rivers, and who knows who else, I forget who originally wrote it.

Pretty Woman, Van Halen originally by Roy Orbison.
