What is the ideal replacement for the selenium rectifiers on the 400 and 500 receivers? I have a 6A 200V Bridge Rectifiers (Mouser p/n 821-GBU603) on hand but I have read about people using large voltage replacements. Someone recommended a 3A 600v (Mouser p/n 583-BR36).

The 6A 200V Bridge should work fine for the Fisher's bias supply. I suppose it's better to have a higher voltage value just to be safe. The Fishers 400 & 500 use a negative bias voltage of around 20V and not even close to 6A. The 821-GBU603 unit would be great, especially since you already have it!
 
You can also use individual diodes. I used some UF4004 fast recovery diodes on a recent 400 and also built Drew Bolce's circuit to allow for individual bias for each of the output tubes.
