Probably shouldn't do this but...

So if I wanted to use my set of main speakers and a set of tweeters (both sets 8 ohm) with the unit, I'd connect the right and left positive and negative for both sets to the unit and set the switch to 2 and the amp would see 4 ohms?

No, the amp will see 8 ohms, they are impedance matched. They also have units for 4 or more speaker pair. These are normally used for whole house systems to control bedroom, patio, etc speakers.

A few other models, some do not have any volume adjustment.

My wife said No More Speakers the last time I brought speakers home, so I'll only be interested in controlling one or two sets.
 
Ya, my lady said the same thing about twenty pair ago lol.
The living room is her Domain and she has OCD, so I'm limited to what and where I can have something in the living room.

I consider myself lucky to have 7 speakers, an amp, and a DVD player in this room.
