Grilled some boneless pork chops tonight. For foolproof juicy chops cooked in eight minutes here's the recipe. Let the 1" thick chops reach room temp, sprinkle liberally with dry rub on both sides, place on a hot grill (500 degrees) close the lid, cook for 2 minutes, turn the chops 90 degrees, close the lid and cook another 2 minutes. Flip the chops and close the lid for 2 minutes, turn the chops 90 degrees, close the lid and cook for 2 more minutes.

Remove from the grill and loosely wrap in foil, let stand for 10 minutes while they finish cooking inside the foil. Open the foil and enjoy tender juicy chops.

Made a pot of pea soup yesterday, hey it's green! 2 lbs of split peas, 4 cups of diced onion, 3 cups of diced carrots, 2 cups of chopped celery, 10 cups of chicken stock, some water, bay leaf, thyme, garlic and a big old ham bone from a spiral sliced ham we had recently. Came out really good, but let's face it, Pea soup doesn't photograph very well. As fans of The Exorcist can tell you.

Last night`s Cabbage & Corn Beef, before serving whilst still in the crock pot..
2 big helpings for me, and 3 medium ones for my B-I-L with clover rolls to sop up the tasty juice`s.
There was so much C/C/B that we had to use 2 crock pots for cooking (my common size, and my caregiver`s much larger one !!
That`s ok, as I can work on some of it this week, or have a nice Rueben sandwich oneIMG_1965.jpg night, if I tire of C/C/B leftovers.

Yes, it was OTB, and I`m certain there will be a couple of tasty sandwiches made from the abundance of Corn Beef this week, after my caregiver makes up a couple of pre-paired leftover care packages in sealable plastic take home containers, for easy peasy reheat in the microwave at 30 minutes set a 10% power.

Probably my colon will protest for a week with the unusual influx of large amounts of red meat, that my body is not used to anymore.. :eek:

Baked Herb Seasoned Boneless Chicken Thighs, Garlic Butter Rice and you guessed it, Peas. Yes, that is barbeque sauce I dumped on top. Some new stuff I haven't had before. BBQ Sauce is good stuff.

Salami sandwich, and a can of Campbell`s Manhattan style Clam Chowder w/course pepper and a good amount of Pete`s weak ticket butt burner dolloped on it tonight!!

No pictures, as I possess no smart phone, with it`s handy camera !!

Eastern European Night

I had dinner at my Dad's place last night and we had chicken soup with kluski noodles, golumpki (stuffed cabbage), and kraut pierogi (like ravioli, only different). This inspired me to put together a nice Eastern European dinner of my own.

First, buttered pumpernickel rye.

Next, Küpsetatud Peedid Köömnetega (Estonian Roast Beets with Caraway Seeds): wedged baby beets, olive oil, balsamic vinegar, sugar, caraway seeds, and sea salt.

Next, Frigarui (Romanian Chicken Kebabs): cubed chicken thigh meat, marinated in a special sauce (French thyme, rosemary from the garden out front, parsley from out back, fresh-ground black pepper, lemon juice, sugar, minced ginger, minced garlic, and plain yogurt), and grilled. This was served with mujdei de usturoi (Romanian garlic sauce): minced garlic, sea salt, olive oil, sour cream, and fresh ground black pepper.

Next, Shchi (Russian Cabbage Soup): butter, chopped onion, shredded cabbage, grated carrot, chopped celery, bay leaf, whole black peppercorns, vegetable stock, chopped russet potatoes, peeled and chopped tomatoes, sea salt, fresh-ground black pepper, and a garnish of sour cream and fresh dill from the garden out back.

This was all washed down with an ice-cold Golden Pheasant (a Slovakian lager).

For dessert, strawberry shortcake (I know, not Eastern European, but good, nonetheless): home made shortcake (dusted with pink sparkling sugar), strawberries from out back, fresh whipped cream, dusted with grated unsweetened baking chocolate.
