Your special 4th of July dinner?

Here in Sheboygan, Brats are commonly the default choice and got those as well as some fresh Sheboygan Hard Rolls that I bought this morning. Best thing to put a Brat on (better a double) hands down. Lots of Butter and Mustard-Onions.
(No, Sheboyganites don't pre-boil their Brats!)

Maybe might go out for a brat-burger fry somewhere, don't know just yet?

But was thinking of maybe making a legit from scratch southern style Hamburger Steak Dinner in Brown Gravy with Mashed Taters and a Veggie on the side. Got some lovely ground Sirloin Steak Patties this morning as well.
 
Brisket. Also a pork butt. These are from previous cooks. Burgers and dogs for lunch. The big stuff for dinner.

I sometimes smoke steaks on my propane grill.

Just put the mesquite chips in an box. Or on some tin foil. Put the chips on dry, wait till they burst into flame. Douse them with a spray bottle.

Then put the steaks on. Watch the chips, spray them with water if they re-ignite.

It's not as good as slow smoking, but it's fast and it does give some smoke flavoring.
