Crispy Pork Belly with Watermelon Pickle

Saw this on the Food Network, favorite dish at a place called the Fatty Crab in NY or somewhere. Crispy Pork Belly with Watermelon Pickles. Take a whole pork belly - basically a giant slab of fat with the skin on - marinate in 4 kinds of soy sauce for 2 days, braise, cut in cubes and deep fry. Serve with fresh watermelon cubes and pickled watermelon rind. Basically big chunks of deep fried pork fat. Fatty crab, my @$$, how about Fatty @$$!

A nice piece of bacon is one thing, but that's a cubic inch or two of fat that's only crispy on the outside. Blech.
 
That doesn't look like watermelon rind to me- it looks like the flesh of the fruit. I've got a gallon of watermelon pickles that my mom made sitting in the fridge right now, and they don't look like that!:scratch2:
 
The big red cubes are indeed fresh watermelon. The small greenish ones scattered about are the pickled rinds. My granny used to make sweet watermelon pickles, with a lot of sugar, cinnamon and cloves. I can't reproduce the texture, I think she used some kind of toxic chemical no longer available. :D Anyway they were golden brownish, not fresh and greenish like these.
 
Damn that looks good. :drool: As long as that pork is crispy all the way. I hate floppy bacon.
