You can get good bagels in Arkansas?

We have to go a ways to get a good bagel here in CA; lots of frozen bagels, or supermarket bagels, but not a lot of quality bagels..

There are House of Bagels all over the South Bay. Saratoga Bagel is good. Noah's Bagel is good, but not sure if they are still around.

Yes, Noah's are good, and while they
have closed a number of their stores, they are still around, but a long way from my location, as are House of Bagels.

When you want a nice fresh bagel first thing in the AM, you don't want to trek to another city for your shmear
 
This is going to make me sound snobby, but a real water bagel - boiled before baked - is hard to find outside large cities. Most supermarket and chain bagels are not real water bagels. They are just bread formed into the shape of a bagel. But most people don't know any better because they've never had the real thing.

Real water bagels are heavy, dense, and above all, chewy. They make your jaw ache when you chew on an un-toasted one.

EDIT: And, I've rarely found real bagels for carry out anywhere other than at places where they are made on-site. They will have a huge cauldron for boiling the raw bagels, usually next to the ovens.

The best water Bagel I have eaten is from TAL Bagel in NYC . They are best when baked on a low humidity day and eaten five minutes after baking with butter the ultimate Bagel experience . One of the perks to living in NYC not to mention the Pizza
 
I love lox and bagels. Our local Wegmans seems to make pretty good ones. Oddly, I grew up in a time and place where bagels were nearly unheard of. Only when I got to college did I discover them.
 
I, too, am a bagel snob. Bagels should be much smaller than is popular today - relatively crisp on the outside and chewy on the inside. A supermarket chain called Fairway in the New York area makes pretty good ones, called by them "Mini Bagels", but I view them as "regulation size and weight" bagels.
The Bagel Bakers Union was once one of the most nepotistic of unions. My grandfather owned a small bakery in Newark, NJ. His bakers were members of the Bakery and Confectionery Workers Union. They were not permitted to bake bagels. My grandfather sold bagels that he bought form a Bagel Bakers shop.
I have never made my own smoked salmon. The below smoked salmon, purchased form Costco is in my opinion excellent, and reasonably priced.

True... I had to go to another state.
 
Every so often I'll buy a couple-three nice filets of salmon and give them a slow smoke with alder or cherry wood, the latter being my fav. What I don't eat fresh gets sucked down (food saver) and froze for later consumption.

BTW your picks make me hungry, stop it now! :D
I used a Brinkman smoker until it fell apart. That was when I went salmon fishing a lot. My brother in law is a river guide in Oregon and my brother worked for the fisheries in Washington.

One time 4 firemen showed up at the front door. Apparently a neighbor thought there was a fire. lol! They asked to see and the look on their faces. I offered them some, but they politely refused.
 
Our best here in my town are Einstein Bagel's, dunno if it's a chain, but their in house spreads are incredible. Love the c/c, salmon, but man capers are a toughey for me.
