Ok, Kyrie's post on meatloaf got me to thinking. Comfort food, plenty to go around, and not waste anything.

Beef Stew

2 lbs chuck or pot roast
2 large onions
4 cloves garlic, minced
9 large red potatoes, cut up
4 ears corn, slice kernels from ears
2 carrots, cut up
½ cup cilantro, chopped
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
2 tsp cumin
5 cups beef stock (home made, see below)

Add ingredients to a stockpot or crockpot. Bring to boil. Simmer for several hrs, stirring occasionally. Add water as needed.

Beef Stock

3-4 lbs beef bones
1 large onion, chopped
2-3 carrots, chopped
3-4 celery stalks, chopped
1 tbsp salt
1 tbsp black pepper
Parsley, thyme, rosemary
Water

Roast bones at 400 deg for 45 min in a pan. Add bones, vegetables, herbs and 1 gal water to a large stockpot. Add 2 cups water to the pan, scrape the pan, and add the broth to the pot. Bring to a boil, and skim any foam from the surface. Simmer for 4 hrs. Remove from heat and let cool. Remove any fat from the surface. Strain bones and veggies.
