Interconnect questions?

I recently bought a new TV and the installer removed the A/V interconnects from the old TV and installed new interconnects.

My ? is, can the old A/V interconnects be used on stereo equipment, and if so, will I notice any appreciable differences?

Yes, they can be used on anything with the appropriate connectors.
Will you notice any appreciable (audible) differences? Probably not.
 
Do you have a VOM so that you can check to be sure that the cables have continuity and are not shorted? If they test out OK, they can be used on stereo equipment (I'm assuming that the are RCA type terminated cables?). Differences will depend upon the quality of the cables and moreso the connectors, and said differences are highly subjective and more than a little bit controversial.
 
If the cables were working there is no reason to presume that replacing them would cause them to stop working. They were probably replaced as SOP.
