Long Pepper (Piper longum) and The Unicorn Magnum Plus Pepper Mill

Long Pepper is not well known these days it has been replaced by the chili pepper in culinary use. This is too bad as Long Pepper, also known as Pipli, has a wonderful flavor. I have had a supply of it but the Peugeot Mill I had could not handle it even when cut up. I finally tried it in The Unicorn Magnum Plus Pepper Mill, I hedged my bet by cutting it up with a Hakko wire cutter but this wonderful pepper mill has absolutely no trouble with it at all. The flavor of Long Pepper is different from regular Black Pepper (Piper nigrum) it has a lingering pepper bite with a bit more heat. Long pepper in a BBQ sauce, or cracked onto a baked potato with sour cream, on a steak, is wonderful.

I have the short version of that pepper mill and the matching salt mill. My brother gave them to me around 10 years ago. I use the pepper mill every day. The salt mill not so much.
 
Very informative article. I also use "Grains of Paradise" (Aframomum melegueta) this is a spice that is related to Cardamom. It is much milder than black pepper. A small sprinkling of freshly cracked GOP is magical on pears, peaches, .Honey Dew type melons, and watermelon, use GOP instead of salt on the melons.

We should have a dedicated thread to pepper. There are so many different cultivars of Piper nigrum each with a different flavor.

I have tried black pepper from so many countries. So far the best has been the Voatdipetigery Pepper from Madagascar. The biggest disappointment was the Kampot pepper from Cambodia. At one time Kampot pepper was the top choice of chefs at Michelin starred restaurants. But The Khmer Rouge regime considered it evil and killed all of the growers they could find, and razed the pepper farms. It has taken 40 years to recover and just in the last few years has there been enough to export. I suspect the quality will return in time.
 
Ebay has some good deals on 250 gram size. Having never heard of or tried it, I'm going to give it a go. What would be the overall opinion of running it through a small propeller type coffee grinder?

A blade type coffee will work just fine. Another thing that works very well is a Turkish Coffee grinder.

I was looking at what eBay is selling and it is coming directly from Indian which is good it will be new crop.
 
I ordered some Long Pepper and Sichuan Peppercorns yesterday. I cant' wait to try them in some recipes.

I have a Kung Pao recipe that I've wanted to try that calls for Sichuan Peppercorns. I plan on making it this coming weekend.

I got my pepper order the other day. The aroma from the bag of long pepper is different than other peppers that I've used. I thought that there was a chocolate aroma. Elaine thought more like a slight coffee aroma. As to the taste, we both agree that there is a distinct fruitiness to the flavor compared to black pepper. We're going to season some burgers with long pepper later today.

We still haven't tried the Sichuan Peppercorns. We've used the long peppers quite a bit and it's really something special. Highly recommended.

My long peppers arrived today and I have not been able to put a description to the taste. I may season my spaghetti with it tonight. I has a very distinctive smell. I love trying new things. Thanks for the thread.
