Best Behind the Scenes/Making Of documentaries?

I occasionally like to watch documentaries about the making of great movies, especially those with a good amount of practical effects, or other interesting stories.
Does anyone else enjoy these?

Here are a few of my favorites.

This is the full Mad Max Fury Road behind the scenes doc. There are also a bunch of smaller clips from this on Youtube. It's pretty amazing and fascinating what they did to make this film.

There are also some good ones about the making of the first two Mad Max movies.

I also really like this old Star Wars documentary. There was some real innovations happening there.

Anybody have any favorite docs about the making of great films?

I really enjoyed watching "Hearts of Darkness: A Filmmaker's Apocalypse", which was about the production of Apocalypse Now. Another interesting movie is "Room 237" which concerns The Shining. While not a documentary of the making of the film, it's a fascinating overview of how people have ascribed different interpretations of the movie and hidden meanings of the symbolism used within it.

Check out a then young up and comer named Martin Scorsese doing a behind the scenes of the making of The Bands "The Last Waltz" in particular what happened when they were filming Muddy Waters and the ensuing panic

I wanna say it's on the 40th anniversary re release but I could be wrong.

Yeah, I think I may have seen at least part of that. Good stuff.

I just finished watching "You can't do that...the making of A Hard Days Night". On youtube.

I found "Jim & Andy : The Great Beyond" pretty good. It explores Jim Carey's portrayal of Andy Kaufman in the film "Man On The Moon" and how crazy he became while filming, on and off set.

I was never a fan of Jim Carey, I don't think I've ever got through one of his silly movies, but this kept my attention.

Brian Huberman's movie on the making of John Wayne's "The Alamo", known to its fans as The Waynamo. A labor of love and film history it has interviews with many of the actors and crew and home movies taken at the time. It was first released on the special edition premier version laser disc of the movie and in a shortened form on the disappointing DVD of the movie. It's out there on youtube in its full form.
