My wife is a phenomenal cook so I don't cook much, but Chili is my realm in the house.
3 Bell peppers, diced. I like to use red, orange and/or yellow because they are sweeter than the green.
3 or 4 habaneros - I will add a Ghost occasionally if I can get my hands on a fresh one from somebody's garden.
½ an onion, diced
3-4 cloves of garlic, diced
One big can (28 oz) of petite diced tomatoes
Two big cans (28 oz) of crushed tomatoes
½ a small can of red kidney beans
1 lb ground beef 90% lean
1 lb of steak tips sliced small (1/2” pieces)
I brown the meats with butter, Tabasco and Laphroaig or any other heavily peated Scotch.
After all the ingredients are together, I season with chili powder, cinnamon and honey. I let the hot peppers determine the level of heat. This is the recipe I use if I'm making it for my family. For different groups that like a hotter chili, I will use the same ingredients and amp up the number of hots.
People seem to like it enough that somebody is always asking me to make it for a pot luck of for the various boondoggles that we go on. My kids are vegetarians but will "cheat" when I make it. The smokiness of the Scotch, the honey and the cinnamon are the flavors that most people gravitate to.
