This has been a family favorite for at least 30 years. my Mom found it and it quickly became the birthday cake treat of choice. With 6 kids, it was delicious, inexpensive, and guaranteed to be a crowd pleaser. You can go crazy and add ingredients to make it more like a Smores thing with marshmallow fluff, or add nuts and such to the top. Anyhow, give it a try, it's no bake, and when you slice it, gives a cool presentation.
1 1/3 cup sugar
1 cup cocoa
4 cups heavy whipping cream (We substitute 2 packages of Dream Whip tm, following the packaged directions).
2 tsp. vanilla
64 (or more) Graham crackers of your choice, honey, chocolate, go nuts.
Mix sugar & cocoa. Whip cream until slightly thickened, then add cocoa mixture gradually with vanilla. Whip until stiff. Spread graham crackers with the mixture, standing crackers upright on platter, placing one in front of the other. Press gently together. Spread remaining cream mixture over top and sides. Chill in refrigerator at least 6-8 hours, covered overnight is better, as
the crackers absorb some of the ambient moisture and soften.
Slice diagonally at a 45 degree angle.
These measurements should make 2 "slabs" about 8-10" long.
I just got one for fathers day, If I could find my digital camera, I would include pictures.
