Danimal's Strawberries and Lemon Pound Cake

This is a recipe I developed a couple years back that is always a favorite. I don't really have a recipe so I will estimate the amounts. What follows is my take on Strawberry Shortcake -

For The Strawberries -

Fresh strawberries - (2) 1 lb containers fresh strawberries: Diced (you could roughly chop or slice if you like)

1 TBS Basil - chiffonade

1/2 TSP freshly cracked pepper

pinch cayenne pepper

1/3 cup Sugar

combine all ingredients and let macerate for no less than an hour in your fridge.

The Topping - I sweeten Marscapone cheese with heavy cream, sugar, vanilla and a splash of your finest Kentucky Bourbon.

One 8oz container Marscapone Cheese

4 oz Heavy Whipping Cream (half of a half pint)

1 TBS Sugar

Dash of Pure Vanilla Extract

Splash of your best Bourbon

Break out your hand mixer and blend until whipped. Refridgerate

The Pound Cake - I hate baking so I just get a nice pund cake or lemon pound cake from the bakery at my local grocery store.

To serve - Place slice of pound cake on plate or shallow bowl. Spoon strawberry mixture over the pound cake and top with a quenelle of the sweetened Marscapone Cheese.

This is my "Put On Your Big Boy Pants" Strawberry Shortcake. The flavors are big and bold and is NOT your Grandmothers strawberry Shortcake.

Enjoy and, PLEASE, play around with the amounts to get the sweetness and flavor profile to your liking.
