I have a pair of these that sound pretty good. I haven’t done any work like rebuilding the crossover. The cabinets are in pretty good shape, but the grills need work. The cane is torn. The fabric under the cane looks good.

Is it worth it, and how do you replace the grill?

I removed the original material, pulling all the staples. Then put the new grill cloth on the floor. Line the edges of the grill frame so that it is square to the pattern on the cloth. Then I used speaker surround glue from Simply Speakers, the kind that tacks up somewhat quickly. Wait for it to get tacky. Then fold over tightly, working your way along the edge. You have to keep working the edge up and down until it stays tightly. Important, due the whole process one side at a time, starting with the long edges.

Actually, Simply Speakers has a nice video on their website that helped me a ton.
It is much easier to do a “cloth” than a “cane” but choose as you like.

replacing grille cloth is usually easy. New black material is inexpensive and looks good.
 
Original cloth is dark brown cane glued to fabric that matches case. It looks good. I suppose if I bought new speakers, they would be wood grain cabinets with black fabric.

I don't see how to get the grill off. Should I just tear existing grill? Can black fabric be applied over existing grill?
 
The grills I worked on were Velcro attached. If there is a metal badge on it, they were often spikes that went in to the front baffle so they may require effort. If you are replacing the fabric anyway, you could cut it away so that you came reach in to the driver openings to make it easier to pull off.

I have a set of these EV's. I like them. You have to open the back and get to them that way. As long as you're in there recap the crossover. It is straight forward and is easy to get to.
