fast, simple, delicious $2 lunch

delicious any time day or night, really. I minced a fat little clove of fresh garlic and sauteed it in a tbsp. of olive oil, added a can of pinto beans (after rinsing the briny slime off them in a colander, very important), and sort of stir fried them till hot, threw on some crumbs of sea salt and cracked on some black pepper. I also took a square of day old sweet cornbread, split it, drizzled olive oil on it, and put it, oiled sides out, on a Foreman grill with a good 1/8th inch of Jarlsberg swiss cheese and some lightly sauteed Cremini mushrooms between, making a kind of grilled cheese thing. Absolutely delicious, and very inexpensive, too. Fresh, pressed coffee to wash it down.

If one just had to have meat, some ham on the grilled cheese would work, but I wouldn't interrupt the flavors like that myself.

Anyone else have fast and cheap lunch solutions?

I don't work out of my home, so fast and cheap lunch would be limited to something like Chef Boyardee, ramen, or PBJ. At home, now that's a different story. As a bachelor I could do wonders with a box of Mac N' Cheese doctored up with breakfast sausage or hotdogs. Beans and cornbread would be a healthier option.

I like to get Chef Boyardee Ravioli.(I use the double stuffed) Spread evenly in a small pan. I put a few drops of A1 on each one. Then I cover with some shredded cheese. What ever pleases you. Bake at 350° for 20 to 30 minutes. Good and cheap.

Spread mashed avocado on toasted whole wheat bread. Add salt and fresh ground pepper. Delicious and filling.

absolutely. avocado and sliced tomato together, cracked pepper and sea salt, yum. also very tasty on toasted cornbread. fresh, unprocessed foods, with the flavors they bring do it for me.

Can of biscuits. Oven 350. Couple of minutes before they are done, cut the bottoms off. Generous amounts of butter and shredded cheese. Back in the oven.

Mmm. If you then proceed to eat the entire pan of cheesy goodness, you will be full. And you've spent about two bucks.

I also eat Chips Ahoy cookies slathered in peanut butter.
perhaps I shouldn't be divulging my eating habits.

Here in California it is easy to find organic Hass avocados that are perfectly ripe. They have a creamy texture and sweet buttery taste An unripe 'cado can be stringy and bitter.
