Fried Rice Recipes?

My wife and I just finished dinner. She asked me to make some fried rice for us while she whipped up some pineapple chicken and stir-fried veggies.

I don't think I've ever made fried rice the same way twice. It all depends on what's in the fridge.

I like to get a big cast iron skillet hot (don't have a wok), add some vegetable oil and about a tablespoon of sesame oil. I get it hot till it's almost smoking, then add about a cup of uncooked rice. I turn down the head to medium and stir it until it browns a bit.

Then I remove it to a bowl and sautee some diced onion in a little butter. I add (usually) diced pork, minced garlic, pepper, a dash of Teriyaki sauce, and some soysauce. Then I put all that into another bowl and put the rice back in the pan. I add a little over a cup of water and crank up the heat till it starts to boil. Cover it, then let it simmer for about 10-12 min.

When the rice is tender I add the pork/onion stuff, and maybe some beansprouts and mix it all up. A couple of fried eggs tops it off.

Good schtuff!

Oh, and Jasmine rice is awesome! But any rice will do.

How about you?

My wife is Filipino and makes a deeeeeelicious garlic fried rice. Heats up the skillet with oil, adds fresh cooked Jasmine rice, minced garlic and I think some onions and stir frys that until we can't take it anymore and we eat right from the skillet. Then there is the variety with meats and veggies....Whew...gettin' hungry................

 You lucky dog.

Heat is the key... and the cast iron does seem to be the cats a##
what ever ya add its Fried Rice..
Me , raw egg right before serving (cracked and stirred in, not beaten, white and yolk as they form). Oh ya! heat....
Enjoy!

I marinade some wide and thinly sliced sirloin steak overnight in soy sauce/vinegar/honey/one bay leaf/pineapple juice........
I put the steak on a skewer in the broiler and brush it with the marinade
every five minutes for a total of 5 times.......
I remove it from the skewers and mince it up.....
I then boil the marinade until it is as thick as syrup......
I make some white rice and set it aside.......
I fry some eggs and set them aside......
I fry some bacon and set it aside.......
I chop some chives...........
I mix it all together and let it sit covered for an hour before eating

Rick...you should now better. Do a search first! lol! :D

Here you go. All you ever wanted to know about fried rice...well almost.

btw...mine is never the same too. Whatever is in the fridge at the moment get's tossed in. The basic ingredients are leftover rice, soy sauce and black pepper.

I've done some searching on the web, but I was asking AKers in particular.

Akers come up with so many interesting and original ideas. On any subject imaginable. A bunch of creative bastards. Like the thread I started about Bloody Marys. There was one on pancakes, IIRC.

After I get home from work I like to have a couple of beers to whet my appetite. It's fun to ask about recipes when your stomache is growling. Or is it?

Ahhh! The Bypass Special!

Just kidding. Sounds like a 7 course meal in a skillet. Some days I have all those ingredients left over from a cookout. Never used a Bay leaf, though, in fried rice. That's uncharted territory to me.

I push the rice aside in the skillet and crack two or three eggs right in there and let them start cooking for a little bit. Then I start stirring them until they're done. Then I mix them into the rice.

I tried it like you do, but it takes so long to stir the rice until all the egg is cooked, and then there's no chunks of egg visible.

I did mean an AK search. That was a link to a fried rice thread right here in AK land!

:D

As in the OP, I fry the rice BEFORE I add water. I stir it in a hot skillet and then turn down the heat and keep stirring often until the rice is partially brown. It seems to give the rice a nutty flavor and texture. You guys should try it.

When I was in college my wife and I ate fried rice all the time. My recipes sucked bad for a year or so, but later my eyes started to slant and the concoctions got better.

Leftover rice is a different story. Works great, especially when it comes from the Chinese restaurant. What else can you do with it? Leftover Chinese restaurant white rice and poor college students were probably the origin of fried rice.

I've even used breakfast sausage, hamburger, spam, polish sausage. Not recommended.

By the way, cooked rice can go bad in the fridge. Use it up asap. Or freeze it.

Onepixel: checked out that link! I wish I had done a search as you suggested. Man, I am READY for another meal of fried rice....

Thanks!
Rick
