Hot wing sauce.

Picked up some Famous Dave's Wilbur's Revenge wing sauce. Not bad. It's a few notches up the heat scale from the typical "hot" wing sauce and more of a smokey/BBQ flavor, definitely not a Buffalo-style sauce.

Might not be the right sauce for those not liking hot stuff nor those chili heads that seek pain as pleasure, but for those in the lower-upper range of heat seeking a hot but not unbearable you might give it a go. :thmbsp:

FWIW, I'd say an average person would consider this a pretty hot sauce just so you don't spring it on an unsuspecting soul.

Ahhh...hot sauce

A place I worked had a tray that went to the table that had three different mustard's and up to 8 different hot sauces in each tray.
I remember....Jamaica hellfire and Inner Beauty were the two that had warnings on the side of the bottle...also printed on our menus.
We also had the classics...Franks,Tabasco,Louisiana brand...but I used to pick up a lot of different sauces at Rafael spices in Detroit's Eastern market.

Mustard...reminds me of when a buddy of mine (one who will eat anything to prove himself) unknowingly scooped up a big wad of hot mustard at a Chinese joint. HA! :D

Wasabi mustard ??...:yikes:
Similar story with the Jamaica Hellfire..Doc's special..
I was at a SuperBowl party and brought a bottle of Hellfire 'cause the host and one of his friends were true "hot heads"...hot sauce, peppers, you name it,they were always trying to out do each other...

So my friend that hosted the party came to see me at work and tried some about a week before SB.He liked it,but agreed,as stated on the bottle "A drop will do ya"
Anyway, his friend picked up the bottle at the party and read the label out loud,"I drop will do ya"....as he poured it on a hotdog like ketchup. Before I could stop him he shoved about 1/3 of the hot dog into his face and started chewing............grown man :tears: like a baby !!!
I asked my buddy's wife if they had any ice cream....luckily they did.
He sat off to the side for about a half an hour, putting one heaping spoon of ice cream in his mouth at a time, and letting it melt before swallowing.
It would have been funny if he wasn't in such obvious pain.
Of course everybody laughs about it now, including him.

I had a jar of habanero mash, just pureed habaneros with a little salt and vinegar in a thick paste. Hot stuff.

I was dipping the slightest corner of a Dorito into it and sweating bullets when along comes a guy and notices this. He proclaims himself immune to hot food since his wife was Mexican.

I loaded up about a spoonful of that stuff on a Dorito and handed it to him.

It damn near killed him, he was choking so had he turned extremely red and I thought he was going to die.

So he heads out, coughing and choking and looking for water when another guy pops in, proclaims himself a hot food aficionado.

Rinse, repeat.

Fun times!

I grew a few habaneros this year. I sliced up half of one once (sans seeds) and loaded them on a cheeseburger. It didn't kill me, but I sweated a fair deal. A puree...Nah, I'm not suicidal.

I played guitar every Wed. this past summer at the Original Famous Daves in Hayward, WI. Wilburs Revenge does have a nice kick to it, but it really got me the next morning. Ouch.

Removing the seeds, is the key to enjoying a really hot pepper such as a Habanero or Scotch Bonnet without killing yourself.

I thought I read that there is no heat actually in the seeds, but heat is on the outside of the seed mostly by coincidence because the seeds are in contact with the white, pithy material which contains lots of the capsaicin glands.

True, but if you eliminate the seeds, the outsides of the seeds are eliminated as well, and usually a good amount of the pith.

I make my own wing sauce. Roasted habanero, butter, and marmalade...mmm mmm mmm! Got the recipe from a friend of mine thats a cook at a local bar.

I usually do the same, make my own. Think I mentioned before, I'll start with a basic tabasco, and butter, then go from there.

I've done things like add small amounts of good chile powder (some I got given to me from Hatch NM, with a little bit of heat, but unbelieveable character-flavor), garlic, habanero-cayenne powders to kick up the heat, and even things like small amounts of soy, or worchesteshire sauce also.

Most of these additions seem to give a bit more complexity, and character to the wings.

One of these days, I'd like trying to add in some sliced-diced Jalapenos as well, to offer a bit different character, and heat.

Frank's Red Hot + smashed up garlic + butter + a bit of romano cheese does it for me.

Here is a recipe that I got from a friend that supposedly came from some famous restaurant. (Don't remember the details.) This was their "2nd Degree Sting Wing Sauce." In my opinion, great flavor and not too much heat. Of course, YMMV since I am originally from Louisiana!:tresbon:

Anyway, need to make another batch, it has been too long.

Last few times, I would buy a gallon jug of Frank's Red Hot Sauce at Costco and mix up a batch that is 16 times the amount of the base recipe, i.e., 8 cups Frank's at a batch. It is nice to have a few jugs in the back of the the fridge for an emergency. Frank's was easier to find in large quantities, but of course I am also partial to Original "Louisiana" Hot Sauce.

Second Degree Sting Wing Sauce

  • 1/2 cup Louisiana or Frank's Red Hot Sauce
  • 1/4 cup Bar-B-Que Sauce (No Hickory Flavor)
  • 1/2 Tbls Mustard
  • 1 Tbls Margarine
  • 1 1/2 Tbls Sriracha Hot Chili Sauce
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Cayenne Pepper
  • 1/8 tsp Curry Powder
  • 1 tsp Tabasco Sauce

Melt margarine and combine all ingredients. Apply liberally to wings (or serve on the side to the timid!) Enjoy!:thmbsp:

For those not familiar with the Sriracha Hot Chili Sauce, here is a link of what you are looking for http://www.huyfong.com/no_frames/sriracha.htm

.....how do you guys rate the hot sauce packets at Taco Bell?....I'm talking about the hottest one that has the name "FIRE" on it....isn't there some habanero in that one?.....
