How do you like your perogies

Try some good, local old-school kielbasa, diced small and pan fried, on top of your pierogies.

You DO have a local guy that makes kielbasa by hand, right?

I have a couple close by.One is a small factory that makes Italian and Polish sausage. The other is an Italian butcher shop that uses the hand crank casing filler.
The small factory,is reallly small and has been in business in the same location for years.
I was the chef at a couple of golf courses, and always used Rinaldi's if possible.

I don't have a guy, however I do sometimes substitute proscuitto for the bacon. I do have a kielbasa coil in the fridge though, maybe next time.

Now I have to decide whether or not to start a cabbage roll thread.

Growing up in grandma's house, the perogies were for holidays, the golumpki was standard fair. Now that grandma, mom and my aunt are gone I had to learn to fend for myself.

On the rolls what do you want to know ??? Usually the 4th or 5th day I like to change them up a bit. A slice or two fo Kraft American and some ketchup, I am good to go..

The perogies I have covered as well... Kraut is my fav, pan fried with onions and topped with sour cream, perferrably with a steak as well. Not that polish sour cream with sugar, never really understood that one :yuck:

WTF is a Pierogi ?!? (grin) For the record, I've had cheese/sweet onion ones, & found them GREAT...I bet the cheese/bacon version would only be BETTER...

The Polish auto companies still have some quality control issues to work thru.

FSO-Polonez, if I'm correct...These started out life in the late Sixties/early '70s as a Fiat 127, I think.

With fried onions & a ham steak fried in butter. Or if the opportunity presents itself, at Little Poland Restaurant on 2nd Avenue & 12th street in the east village.
