It's 4:30 am and I'm on my second cup of coffee, it is by far the best cup of coffee I've had in a long, long time. I've roasted my own coffee for 25 years and will drink no other coffee that I roast myself. It's a question of freshness, fresh coffee is more flavorful and packs more caffeine in every cup. Wake up and smell the java! Who knows how old that junk you get in the can is? Or in the dispenser in the grocery store? The truth about coffee is that unroasted beans stay fresh for about a year, roasted whole bean coffee, about 2 weeks. Ground coffee , about two days max. Today , I went to the extra trouble of making french press coffee. I have one of the best drip machines money can buy , called a Technivorm mocha master, which still brews a better cup of coffee at probably 7-8 years old, a good cleaning is in order but it new it still can't compare to french press. Total immersion of coffee for 4 minutes bring up all the wonderful nuances the beans have to offer, and you'll remember the cup, it is so much more than drip method you'll be wondering why you haven't been drink coffee prepared this way every day. Of course, fresh roasted beans are the key to a great cup of Joe. The coffee I'm drinking today I roasted 4 days ago. Most coffees are best after some rest after roasting, let's say 1-5 days. Most of the coffee I chose are good/better after one day pf rest, but I love the earthy coffee from Indonesia that require 5 days rest. I have 2 grinders, so I can have two coffees to chose from every day. Granted , that is excessive, but when the ex started acting crazy, weaning herself of the best coffee anyone can drink, home roast , a second grinder was necessary for the crappy. over priced lousy coffee beans used in heavily flavored coffees on the market today. Trust me, roasting your own used to be the cheapest way to drink coffee, but today unroasted beans of quality start around $7 lb, and go up from there. It's insane, but worth it when you tip the cup into your mouth and taste the wonderful flavors your coffee has to offer. Also, when you select your own coffee, you can find ones with attributes you prefer. I generally buy coffees with low acidity and a natural sweetness. I like a lot of body in the winter, and like a honey process the best. The caramel flavor always pleases' me. Today's cup is mysorenuggets. I thought I miss the roast a bit, but with the frech press brewing I realized that I hit it spot on, at a city+ to full city roast. You drink coffee every morning , every day can have a great start to it with a better cup of coffee.
