Thanks for all the help, guys. I will be periodically checking ebay for gear that you've suggested.
I also think I'm going to try and build some form of a VU meter with a bunch of LEDs and an Arduino. I am starting to fool around with electronics, so it might be a fun project. I will keep you posted in case anything comes of it.

I will probably try to copy what this guy did, because that's exactly the result I'm looking for.
