I was fortunate to receive a small package of venison a couple of weeks ago, and boy has it been a treat! No one I know around here hunts, or eats venison, so It's been some time since I have had a chance to enjoy some!

First up was a batch of venison chili, with the ground venison. Yummy! Next up was a spaghetti sauce with ground hot venison sausage, came out so good I was very proud of the results!

Yesterday, for breakfast I had eggs and venison steak, and again this morning. cooked up in bacon grease, what a way to start the day!

Tonight, it's Italian venison sausage with peppers and onions... Ahhh, that's the sh*t!

I wish it was available at the supermarkets here, it sure beats the hell out of beef in my book for all kinds of dishes! :thmbsp:

Back when I was in Northern CA and could hunt, I had a recipe for what I called Bambi Bourginoine. It's been a few years, but I remember slicing the tenderloin into medallions, dredging them in flour, frying them in bacon grease and I think the sauce was made by pouring burgundy into the drippings. I'll see if I can hunt up the recipe, but it was tasty.

Good Eats John and
some good recipes.
Good friend gave me a Venison roast
for Christmas.
I seasoned some up and sauteed
it along with some tasty wild rice
for my NewYears dinner.
Tasty treat!
SixCats is coming over tomorrow after we
pick up a console to help
me polish off the rest.

I thought all the wild game in England had been slaughtered and extinct since
the mid-1600's. (Well, except for the tupenny uprights in Manchester, of course.)

My son took a deer with a bow a few weeks ago and gave me some ground (with beef fat added for moisture), some steaks and a roast. My wife and I did burgers one night and steaks another night. UMMMM GOOD! Just be sure to not over cook, it cooks very fast.

Actually, we are over run with Deer in most areas, as well as wild turkey. The State started a program several years ago to re-introduce wild turkeys to the area, and it's been a big success. We even get moose wandering around here in the spring every year.

One of the reasons we live here. Wi. DNR wants alot of them gone. Earn-a-buck program. Had backstrap New Yrs. Eve. Big hit with pretty much everyone here. Got a freezer full also. Gotta love it...... or not? Have it at least once a week with no waste. Turkey getting just as bad here to, oh well, springs a comin!
Enjoy!

Sounds awesome! Went deer hunting this past year (for the 2nd time -- and I'm in my late 30's) with a buddy o mine and he got a nice big-- and tender-- buck. He and his wife had me and my wife up for some awesome vennison steaks and so several pounds of various cuts are in the freezer now... can't wait to make something yummy... next year I gotta get me one of my own, darnit. :D

.....Modge, does your kind of liver and onions in the Marches of England even have a gravy for it?....did I just lable myself an American Arkansas hick?.....

Yes of course we have gravy, nothing fancy though. Some here dont like gravy but it takes all sorts has they say. My mother makes an onion gravy, superb! but it wouldnt be needed with the fried liver and onions. Venison is expecive to buy here as theres not a lot that are legaly shot. I can get my hands on ( Oh oficer I found it lying by the side of the road) anytime of the year. Now would I ever do that:D
