Question about audio over ethernet

So I've been looking for some information about audio over ethernet solutions so that I can build my own rigs for personal monitor mixes. Basically, I'm looking to create my own version of Behringer's ultranet monitoring or that Furman monitoring system.

I'm mostly curious about the Behringer system, as from what I understand, rj45 cables are only able to send 4 channels of audio, one through each of its 4 twisted pairs. Yet it seems that Behringer's ultranet is seemingly able to send many more channels than just 4.

Anyone have any information on this topic?

Audio over ethernet will be digitized and transmitted in the ethernet protocol. The only limitation is the data rate. The number of pairs has nothing to do with the number of audio streams.

Is a computer able to read this information through its ethernet input? That is, can I access individual channels of digital audio to be modified through code and sent out again?
 
Ethernet is the transmission medium, like a highway. The computer will require a program to send and receive the audio channels.
