I have a Fisher 800c and 400 that I’ve completed doing the upgrades to make them safe. I have been tube rolling with good results. But, I am running 1983 Monster cable interconnects I’ve had since new. I’d like to upgrade but for under $75.00/pair. Any recommendations? Or as my dad said “can’t you leave well enough alone?” We’ll I never met “well enough,” so I can’t leave him alone

Use them. Can't be any worse than original 1960's stuff which I use, along with various RatShack cables over the years, in many cases better. If it runs fine and it sounds good to you, why mess with a good thing.(in other words I'm with your Dad. :D) Most people can't hear the difference between $50.00 Monster cable interconnects and $2500 Hypoxic Copper, compound twisted, teflon insulated, double pair, coax.
 
Larry, I thought Hypoxia was a human condition? .... oh, I get it, it's what you get when you spend $2500 on a pair of cables :)
 
Read/Google what the IEEE says about cables.

You can't get more scientific than that!

Of course, you can spend a **** load of money and believe what you want about how much better the cables sound but it's just a **** Load of mysticism.

If you believe they sound better than they DO !

Belief is powerful stuff. If you believe, then, you believe. Sorry. If the cable sounds good to you, then for all intents & purposes, it does, to you.
 
I'll make a suggestion.
I did some A-B-C...testing of several lower -priced ICs, including your Monster cables, OEM, Radio Shack, AQ, ART, and Blue Jeans. The clear winner to my ears was these:

Well I needed 2 more pairs of RCA interconnects to run my old HK380i HK HD7500CD player and my TU915 tuner. Because it’s bad not to play your vintage equipment. I will move the Monster Cable back to it (It was all bought together.) I ordered BJC-LC-1 it was reasonable in price and had good reviews about 90% of the time like everything you look at. 8 people will say it’s the best they have ever heard, 1 will say it’s OK, and 1 will say it’s terrible and the worst they every heard. I have the BJCs connecting my 800c to a Denon 2910 And an HK T45 TT with a Grado red cartridge playing thru Wharfedale W60E’s and all is good. Even my system if everything is left alone sounds better some days than others ( And I have an APC power conditioner) I think diet can effect your hearing. Just go eat an order of Chicken livers with potato logs loaded up with salt. Your ears will retain fluid. The best mine ever sounded was after an antihistamine and a decadron shot. It’s too early to hear any difference. I’ll just have to make myself listen for hours on end. What torture. Don’t cables need about 200 hours
 
I am very pleased with the BJC LC-1. The entire audio spectrum is improved ever so slightly. I’ve listened about 10 hours so far. More definition in mids and highs. Tighter unmuffled bass. But... my old Monster RCA cables Purchased by me in 1983 have some corrosion you can see thru the clear outer layer and they have been pulled on and off and rotated from different amps over 35 years. So maybe any good new production cable highly rated would’ve been an improvement. That being said these are an improvement as much as tube rolling. ( But I replaced 35 Year old well used non pristine interconnect cables )
