Greek Salad Time.

This is based upon the salad I was introduced to in the Greek Isles on vacation many years ago. Over there, it's called "Choriataki." It's a family favorite in the summer months. Note: No lettuce in recipe - don't add any.:nono:

Coursely Chopped:
Tomato, Green Pepper, Cucumber, Sweet Onion, Parsley (small amount)

Top with: Feta Cheese, Kalamata Olives, Freshly Ground Pepper, Oregano (not too much)

Dress with: Olive Oil, Lemon Juice

Enjoy. Don't forget to soak up the good stuff on the bottom with bread or pita.

You're growing season is ahead of ours. We've plenty of tomatoes but they're all still green.

Lauriann put out a "mater" plant in a big planter on our back stoop/porch. Now, th' damthing has about claimed the whole porch, but its got at least 10 little maters on it, & she's SO pleased w/herself..She also has a little basil plant inside in another planter...Turnin' her into a regular farmer, I am...
 
The lemon juice is KEY to Greek dressing. I've gotten away with half white vinegar and half lemon juice in a pinch. An equal amount of good olive oil. I also add garlic, salt and pepper and some of that Greek seasoning mix. So good you'll sop up the last of the dressing with your pita bread.
 
Tomatoes, basil and mozzarella here.

That's one of my other "go-to" summer salads from the garden. More times than not, I shave off some Parmigiano Reggiano with a vegetable peeler on top instead of mozzarella. I always have it around, unlike fresh mozzarella. I also slice a little bit of sweet onion on top with olive oil and balsamic vinegar. Another variation using basil and tomatoes is called Panzanella which featured stale bread chunks and olives. It's also killer good.
 
The tomatoes are coming in really good now. We are getting about 5 a day out of our little garden. Boy do I love this time of year.

Tonight, we made fresh salsa in the blender using fresh ripe homegrown
maters, 1/2 onion, 2 hot banana peppers, splash of vinegar, little shake
of ground basil, ground cumin,garlic cloves and salt. It was very good :thmbsp:

It is canning time. Not yet around here. We got a late start due to the weather but have had a few tomatoes. The peppers (3 kinds) are looking good.

Peppers get sliced and dried Tomatoes/pole beans and cucumbers get canned.

Yeah! Salsa time! We got a recipie from a (Korean) neighbor that kicks butt! It's basically chopped tomatoes, sweet onion,sweet pepper, jalapeno, cilantro,fresh lime juice & tomato sauce from a can. Adjust proportions & amount of pepper heat till you arrive at bliss!

My mom would make something similar when I was a kid, she called it 'Fire and ice Salad'. She used Italian dressing. Just happen to have cukes and maters, gonna make the Greek version for dinner tonight!:yes:
 
Man I wish my maters would turn!! I have TONS hanging on the vine but I'm not in the mood for fried green tomatoes! I did batter and fry some zukes from the garden night before last... YUMMMY!! :thmbsp:
 
Me too Sub. I just pulled the first off and there's got to be at least 60 more Roma 'maters on the vine. I've got one vine broken and dying, looks like some fried tomatos this weekend before they rot!
 
Made it last night according to Finnbow's recipe, just had the leftovers for lunch, good stuff. Used the bread machine to whip up some pita bread (dough cycle) too.

Same here great big beefsteak variety. Had lots of cukes and Zuchinni so far but when will those big fellas turn red.
