Using HDMI surround sound with vintage gear

I have been thinking of expanding my 2 channel system to work with HDMI surround tv. I want to continue using the current gear for stereo music format but want to take advantage of the surround technology for movies and maybe some hi def through an apple tv controller.
My thought is to use the C26 and MC2105 for the front channels as this is already my main system and to add an old Marantz quad integrated amp to drive the other speakers using a device like this (see below) to convert the HDMI to analog RCA output.
1) Any suggestions to find a higher quality converter?
2) Any suggested quad units to consider that have inputs for each channel on the rear and a good looking vintage face hopefully with a meter for each channel?
3) Suggested small speakers to recommend for surround and center?
4) Have any of you guys created a vintage system that achieves this goal and if so what did you use?

This is new territory for me so any suggestions/guidance would be appreciated - Thanks!
