Adding a pitch control

I don't think the Project Speed Box S would work for you, sorry.....for reasons that others have mentioned, speed appears not to be controlled via AC power. You can see what I was talking about here:

https://www.musicdirect.com/analog-accessories/pro-ject-speed-box-s

No longer available, but you can find one on the big auction site. Again, I don't think this is what you are looking for. There are others as well, my Wave Mechanic being one such, but nothing that appears suited to your situation.
Project Speed box is the right idea but only puts out about 5 watts and you'll need 40 watts. If you have Project speed box or the music hall equivalent, it's simple to make an amp to step up the power of the speed box. As far as I know the speed box does control the frequency sent to the table. It's a simple matter to verify.

Yes I had heard about that. Not the road I wanted to go down but thank you for the suggestion! :)

I am thinking more and more that this is simply not something that's going to be feasible for me unfortunately.
Actually fairly straight forward. I've built probably 2 dozen of these.

So - today's progress I deem very successful -

I repaired the wiring on the Rek-O-Kut tonearm, and was able to test the ancient Pickering V15 AME1 cartridge and stylus, and lo and behold, it works!! Perfectly! (I will still likely get a new stylus, but hey, one step at a time)!

I also wired up the GE VRII and it works too! I lightly cleaned the tonearm with a green plastic pot scrubber, and buffed the headshells up with a dremel style tool and some mag wheel polish. It all came up very nicely!

So the next step is the custom plinth... I was able ( thanks to a tip from @muchachos ) to successfully reach out to a guy that makes reproduction logos for things, and I sent him a picture of the QRK Model 17 logo I found on the innerwebs - the guy had it prototyped in 24 hours! Perfect - one for the top of the gearshift area and one for the plinth body. So all you QRK model 17 people - they're available on eBay now! He also has a beautiful Garrard Swindon logo, so I got one of those for my 4HF.
