This one is only clever if you are familiar with Sydney, Australia. I like a lot of Tsunehisa Kimura's work (the Site Anubis album cover, for example).
I also like a lot of Dave McKean's work, though it's so often imitated, I can no longer be sure that I'm looking at his work.
Finally, I heart Storm Thorgerson (formerly of Hipgnosis; many covers of Pink Floyd/Dream Theater/et al).

I liked Led Zeppelin's work, thanks to manager Peter Grant and his magical contracts.
The thought of the expense that went into the manufacture of the wheel for III and Physical Graffiti's windowed whimsy must have given the boys a chuckle or two.
I would also like to take the opportunity to twist the topic.
How about pictures (and other artwork) that should have been album covers!
I came across a batch of photos early on in my computing days. I have carried them for many years hoping one day to find a use for them other than desktop fodder. Take a look...
On the off chance that someone else may have taken a liking to the images, i googled the name Leokadia Skotnik and finally got this after all these years:

There were so many neat Jefferson Airplane albums. Long John Silver with the stash box, as mentioned. Bark with an included shopping bag and a sheet with the "What you can do with the bag" poem. After Bathing At Baxter's full of doodles, crazy photos, and a Cobb cover drawing. Don't forget 30 Seconds Over Winterland which the After Dark screensaver stole the flying toasters from.
And Three Dog Night with Seven Fools, the one with huge playing cards inside.
