I've seen that same thing happen in Lake Apopka near my home town. Lake Apopka is a very polluted, over enriched lake and the fish populations are way out of balance. The "junk" species of gizzard shad are way out of control. They are in huge schools and will fly out of the water just like in the video. I've been hit in the head with a shad and I can tell you it is no fun.

Speaking of no fun, there are annual reports of fish jumping in the Suwanee River and rivers in North Florida. Unfortunately for the boaters they are alligator gar and sturgeon that can reach upwards of 100 pound. A man was killed a year or two back when a sturgeon leapt out of the water and struck the man unconscious. His boat ran into the bank at speed and he was killed. Not a way to go IMO.

In SE Iowa, we have them on the Mississippi as well. I've had several in my boat, usually avg about 7 lbs (alot bigger than in the video). One hit me in the head and I saw stars for a second. Good bait for catfish if you cut them up. Never tried eating one.

Yep.. when I was in Illinois, some used to catch the big carp, then grind them up into patties and throw them on the grill. I never tried them.... just didn't sound appealing.

Carp can be very good eating. Filet, score and fry, brine and smoke (better than Mullet imho), ground up with w/ a healthy dose of Ol' Bay and bread crumbs then pan seared and oven finished, yummy.

You can can them like my father in law did, they came out like canned salmon.

Pickle them like herring, w/onion and spices.

Us po' folk eat lots of things others won't try.

Fortunately,Lake Apopka is only one of hundreds you get to chose from in CF.
I'd recommend East Lake Toho from Nov to Apr for some monster Crappie or should I say "Specks" if your are into fishing.

The Asian bigheaded carp and silver carp are some of the most heavily eaten fish in Asia. I've had them fried and marinated raw in ceviche - quite good when done right. We have a big problem with them here on the Missouri. I wish more people would eat them, or someone would figure a way to use them for fertilizer economically.
