How do you know if it is a two channel or a multi channel SACD?

There are several different standards -- it should say on the back either "stereo" or "multi-ch"/"stereo" (one above the other). They are usually labelled correctly.

And a hybrid means it also contains a CD-layer -- being a hybrid is no indication of multi-channel-ness.

It's all basically an attempt by designers and manufacturers to baffle everyone into purchasing more equipment.

I still occassionally get work for mastering and encoding both 5.1 DTS and DD material.

The format wars will continue. After all, selling new technology is the only way that manufacturers can survive.
