Speakers - Kef R11 or GoldenEar Triton 2+
Room size - 23’x23’ with 13’ ceilings.
Unique aspect of room - It will have 10” thick, 14’x10’ foam on the floor (for use as a crash pad for climbing training). Mentioning in case this has an effect on sound.
Type of music I listen to - Hip hop, Rock, Alternative

I’m partial to SVS and leaning toward 2 subs. But I’m curious what size/model people think I need. Open to other brands if you feel strongly about alternatives.

Budget is about $2K. But I also want to know if that’s not enough.

I also like SVS. I have a SB12-NSD, which I believe is discontinued but has a replacement. A couple member friends have them too. It's very easy to integrate into a system and not stand out, like many subs do. I definitely think you'd need two of these for your space.
As much as I like that SVS, I built a subwoofer last year that definitely plays deeper and way louder. It's powered by a QSC 900 watt amp and will literally shake the house. Price for driver and materials is a bit over $400, amp not included. I can give details if building one is an option.
 
Do you have a dedicated amplifier you can feed the subwoofer(s)? I don't mean an RCA output on a preamp or an amp, I mean an amp with the speaker terminals you can use Speakon with.
 
I've heard HSU makes good subs. Also Tekton makes some musical subs. I have a 8" sub from them that digs deep.
 
I recently took the plunge myself and went with the SVS 1000 Pro. Soon as I got it dialed in I thought two would be even better. Absolutely love their app that lets you make adjustments from your listening position. I got mine as an open box for less than $600, seems like a smoking deal.

I bought a commercial 15" sub and I am going to try it with a Crown amp. I got an ElectroVoice on ebay for a song. Its crazy what you can get with commercial gear 2nd hand.
 
JTR would fill your needs , I own the JTR S1 and it’s a very musical sub capable of any music you play , accurate, tight very deep bass when called upon. Highly recommended.

I was focused on active subwoofers. But I’d get an amp is passive is better.
