Online saw a review of Mac n Cheese.
The blue box stuff was rated high.
So I picked up a case at Costco.
It was bland and I was very disappointed.

Next time I grabbed a case of Annie's.
So much better!
I make a good smoker version but for tonight I just want a step up from premade. Still dead simple.

Ingredients:
1 box macaroni of choice (I use cavatelli)
1 bag shredded cheese of choice (make sure it’s coated in some kind of starch, not new fangled cellulose)
12 oz Evaporated (NOT condensed!) milk
1 cup pasta water reserved

Just slowly heat the milk and whisk in the cheese. Boil the pasta and pour your cheese sauce over after draining, adding 1/4 cup of the pasta water at a time to the appropriate consistency.

That’s literally it. Fool proof. Of course you can add seasonings as desired. A bit of powdered mustard, paprika, and of course top your fresh bowl with cracked black pepper, and salt the pasta water.

Nothing like homemade Mac n Cheese. Loved the blue box when I was a kid - the secret is to skip the milk and only use butter.

I love Mac and cheese so much, even the microwave blue stuff, if I’m being honest.

My wife loves it too but strangely our son, who eats all kinds of weird food, still hates Mac and cheese. Now that he’s off to college it’s time to catch up with this long lost dish :rflmao:

Mac n Cheese in a box along with packaged Ramen is my "emergency" or "to lazy to cook" food.
The other day, I made Japanese Tonkotsu.
Slightly cooked differently, but it tastes just like German Schnitzel.
I made homemade Tonkotsu Sauce and had a side of Krautsalat.
Spätzle and German beer would've been perfect. :)

My daughter loves Mac n Cheese and instant Ramen and Rice.
When she visits from NYC, I'll suggest a nice restaurant.
Nope... just want's those three things. :p
