It's just about October- that means big, orange pumpkins here in New england!

Anyone got any good recipes?

Here's a little creation of mine.
Pumpkin Cheese Cake.........
Crust....1 cup graham cracker crumbs, 1/4# butter, a splash vanilla, 1/4 tsp ground cinnamon, 1/2 cup sugar. Mix soft butter w/ vanilla and fold in spice + crumbs well. Press firmly into spring form pan and set aside.
Fillings........
1) 2 -8 oz cream cheese, 1 TBSP lemon juice, 3 eggs, 1 cn (14 oz) sweetened condensed milk, 1 tsp vanilla, mix with electric beater and set aside.
2) 16oz proceesed plain pumpkin meat, 1 tsp gr. cinnamon, 1/4 tsp gr. clove, 1/4 tsp gr. ginger, 2 eggs, mix well w/ beater.
Now slowly fold step #2 into step #1 (DO NOT MIX) use the handle of a wooden spoon and do a figure 8 motion. Should look striped. Pour into pan trying to keep the stripes. Bake at 350 for 35 /40 min or untill thooth pic test is clean.
Topping.....
1 cup sour cream, 1 tsp vanilla,3 TBSP sugar, mix well.

While cake is warm (not hot) spread topping on and chill. Serve cold
This does take time but in the end, you'll get alota this :yes:!

im not sure about pies or cakes,etc but if you have a good recipe for some pumpkin seeds and you find yourself not able to eat them all ..hehe feel free to send some my way . every year i search out two or three pumpkins just for the seeds..i leave the carving and what not to the kids and wife .
 
Try making Pumpkin Crisp...there's any number of recipes on the net, but I tried some last Thanksgiving and it was really good.
