Think you'll find that it's very common to increase the capacitance by 1.5-3 times. You'll improve the bass of the amp. Amps are very very different to other electronic equipment. Have a little research on AudioKarma regarding filter cap value increase. Definitely worth jumping the voltage up one step too. You should also bear in mind the additional draw on rectifiers and the power switch if you do increase capacitance substantially. In this case 12k to 15k is nothing to worry about.

Novice question for you: In the past I've replaced caps on computer MB's and on my engine lathe, and every source at the time told me to always match the original uF, but I can increase voltage to anything so long as the form factor of the the new capacitor doesn't become an issue. So why didn't you follow this "rule" repairing this receiver?

It depends on the circuit. In the case of the main power supply smoothing caps, an increase in the value often helps. However you must also be aware of the extra inrush current where the power switch can take it tough, and the Rectifier diodes can exceed their current rating. In this case, going from 12,000uf to 15,000uf is within the limits. Also note the value is a "nominal" one. 20% tolerance can be + or - the rated value.
