I plan to do pulled BBQ pork (my recipe) with cabbage & vinegar slaw, on potato rolls. Perhaps corn on the cob, to get my butter portion for the day. Southern style Iced tea. Ice cream for desert.
Here in Sheboygan, Brats are commonly the default choice and got those as well as some fresh Sheboygan Hard Rolls that I bought this morning. Best thing to put a Brat on (better a double) hands down. Lots of Butter and Mustard-Onions.
(No, Sheboyganites don't pre-boil their Brats!)

But was thinking of maybe making a legit from scratch southern style Hamburger Steak Dinner in Brown Gravy with Mashed Taters and a Veggie on the side. Got some lovely ground Sirloin Steak Patties this morning as well.
I'm going to smoke a 4-5 lb sirloin tip tomorrow morning. Planning to use mesquite for the smoke. Might throw in a pork loin, too, for good measure. Serving that with grilled corn-on-the-cob, best way ever to cook corn IMHO.
I've got a 1.3 lb, 2 inch thick Black Angus strip steak that I'll be cooking for dinner. I'm going to try out a new potato recipe: crushed baby red potatoes with butter, garlic, chives and parsley. I haven't decided on the vegetable yet.

Baby backs are done for better or worse . I haven't smoked ribs on a grill in yrs. They cooked way too fast. About 4 and half hours. So much for 321 system. Oh well dinner is served. Eric
