I have an unmolested C11 that is starting to get a little noisy. I want to replace all of the coupling capacitors, but I want to stay as close to the original sound as possible. Any recommendations on caps I should go with?

I have not worked on a C-11 so all I have is general comments for you.
I always start by measuring the caps I want to change with a caliper or a small machinists ruler. I also measure the space available (largest part size possible) and the spacing of the connection points. While doing this I also make sure the values match the schematic I have, as some changes were often made during production that are not documented. I go with the value that actually in the unit if the part seems original rather than the schematic value if the values differ. I choose the same type of cap (metal film, electrolytic, paper in oil, etc...) if I want to keep the 'personality' of the amp intact. Remember to look for caps with the best temperature ratings and longest life ratings. Being that coupling caps are in the signal path I would also try to find caps made for audio applications with low IR and noise ratings. Sprague, Nichicon, and Panasonic are great brands and there are many more choices.
I am sure you will get some more specific suggestions from others on the site that have actually restored this model.
