I have been interested in finding finishes that are 1) not polyurethane or Danish oil, 2) don't have to be waterproof, and 3) sort of disappear while still protecting the wood and making a silky smooth finish. I have a friend who makes little bowls and similar pieces on a lathe, and his finish looks awesome. I think he uses some kind of a shellac and wax combination. I will have to ask about that. It comes out very smooth but not shiny, it's satiny and just begs you to feel of it.

Look into Deft lacquer. It sprays on easy and dries really quick. Allows the grain to show. Another option, but needs a little practice on scrap pieces to get right, is Liberon Finishing Oil. Brings out the depth in the wood, provides a protective layer. One coat to 5 goes from semi-flat to gloss.
