Show Us Your Dinner! (Home Cooking ONLY please!)

Every year for the last I don't know how many years I've fixed a pot of chili for the Super Bowl. Fired these up about 8 this morning, just turned the crock pot down to warm, and let them rest til suppertime. Just the wife and I this year.

Good food is NEVER boring, and ALWAYS something to be shared with others.

If running a restaurant was simply making people happy with food, I would have been doing it for decades by now. Unfortunately, it is mostly politics, drama, and other BS. Too sad.

Enjoy,
Rich P

Tonight was chicken cacciatore.

Chicken thighs browned in my Lodge cast iron skillet, garlic, onion, fire roasted tomato added w/ some Italian seasoning.

Then baked in the oven til done.

Served over fettuccine pasta and topped w/ parmesan cheese.

MMMmmmmmm ... that would have certainly gone good with tonite's stuffed chops ...

Couple days ago I would have had to chisel the bbq out of the snow. 50F today, so I may just take a walk on down to the corner butcher and have him cut me a couple of his inch thick delmonicos ... burn em on the outside, and leave em "moo capable" in the middle ...

Really tall cows thereabouts I reckon ... <G>

OK then ... who says Lent can't be fun? Baked wild sockeye salmon with homemade potato salad.

Salmon is brushed with butter then gets a good coating of apple sauce and apple rub. One thing I do with the potato salad that might be a bit different - I boil red potatoes till they're still quite firm, scrape off the skin (saving the best part of the potato right underneath), then cut them in half and bake them the rest of the way. That way they sweeten up yet stay firm.

Tonight's entree: Baked Yemeni Chicken and Vegetables, with Harissa Mayo. This is quite spicy, but addicting.

Strawberries just came into season. Here are a couple of uses for them that Her-Heidiness whipped up tonight:

We like puff pastry better than shortcake or angel food cake.

Try that sometime with southern (buttermilk) biscuits. A bit salty, and makes for nice contrast with the sweet ...

Now there's a samwitch I'd be proud to call my own!

Went with a classic pot roast last night ... very light on seasonings, just like Grandma used to make, with a couple cups of beef bullion to stew the veggies ...

Perfectly marbled piece of meat I couldn't resist. Secret to super moist is to sear and seal it under the broiler first ... just falls apart with a fork, yet slices great for sandwiches when cold.
