Walleye

Never had walleye. We have white perch in the rivers and streams, but I’ve never seen any get as big as some of the walleye pics. My father loved perch fried whole with tiny bones and all.
Saltwater species like redfish and speckled trout spawn in many of the bayous and marshes and are extremely popular with local anglers. My favorite is lemon fish, also called cobia. It’s a large fish caught offshore. The flesh is nearly as dense as tuna and they get big so you can cut steaks out of it. It holds up well on a grill too. My brother in law worked offshore and would come in with a duffle bag full of fish he caught. Amberjack, lemon fish, tuna, etc. all cleaned, packed and frozen. Oh, best of all- free. Redfish filets at my local seafood market run about $12 lb.

Walleye and lake perch, I think one is as good as the other. There used to be tavern on the East Side of Chicago by the steel mills called the Lakeside that often served walleye and lake perch; I'd take long lunches there when we boilermakers had a job going in the mills or the nearby powerhouse. I remember Phil Schmidt's too.

This was a thing in all the mill towns. Cleveland, Chicago, Gary, Pittsburgh, Warren/Youngstown, etc.

I was lucky enough to work all over NE Ohio. All of our techs just happened to know the best places to go for fish and pierogis. A lot of them were right outside the mills, or very close. Church basements were also a great place for fish, especially during Lent.

Tonight we had Plokkfiskur with ysa.. - like a fish stew with potatoes and haddock from Iceland.

Man! That there is one fair sized Walleye, or Pickerel as they call them here.

And to have "Wild Rice"! Best combo EVER! :bigok:

Lucky you.

Unfortunately, with their reputation of being the fillet mignon of freshwater fish, they've become overfished. Daily bag limits and slot-length limits are now common, and those limits are getting more restrictive here in the Midwest.
