How is the Pi connected to your stereo? What DAC are you using for it? The internal one or the same external DAC that the Touch is using?
If you are just swapping out the touch for the pi with all other connections the same, there won't be a difference because you are bypassing the DACs in both machines and using the external DAC.
Internal DAC in pi vs. external DAC with Touch: probably external DAC but can't say without knowing which one it is.
The pi can play higher res files than the Touch but I believe there is an upgrade to make the Touch play at the same resolution.
All of my real squeezeboxes have bit the dust and the RPi is a great replacement for it if you want to stay in the squeezebox arena.
One more thing: the RPi is limited to Spotify Premium and TIDAL (last time I checked) for streaming. FM radio is practically unlimited.

I am not sure why they are suggesting you get a RPi. I think there won't be any difference if you use the Tubedac 11 with either the RPi or the Touch. I don't think the DAC or the audio output in the RPi will better than the Tubedac 11. It looks to me that you have a nice digital setup already.
Maybe they are suggesting using the pi as the music server in place of the desktop or laptop. I always hated the thought of using a computer for a music server (seemed like overkill). I have my server on a NAS unit which is connected to my router. The router is connected over wi-fi to my Touch. There are many options to replace the computer as the music server if you want. The pi is one of many ways to go. The advantage is it can be left on 24/7. I didn't like the idea of leaving my desktop computer on all the time or booting it up when I wanted to listen to some tunes.
The pi can also be used as a music player, but since you have a Touch, it doesn't make any sense to do that.
