First time making shrimp enchiladas. Lots of sauteed veggies (garlic, diced red & yellow peppers, tomatoes, leeks - wife is onion intolerant), shrimp & spices. We feared the chili powder, cayenne & enchilada sauce would overwhelm the shrimp, but it turned out to be delicious. Made guacamole as the garnish.
Our lilies have done well this year.

Baby Backs, green beans and black beans w/corn.

Well it was supposed to be baby backs Saturday night when I pulled a vac sealed, cut in half and nested rack from the freezer. Trying a quick same day method they went straight to 135F sous vide for 3 hours still sealed to be pecan smoked and basted with homemade sauce using the Weber fuse method for a couple hours. Things changed and they went straight into a big bowl in the back of the bottom fridge level. Never really looked at them ribs.
Today I fired up the Kamado with lump hardwood charcoal and pecan chunks intending to baste and smoke them for a couple hours. Magically they came out of the pouch as a small oddly shaped tri-tip. So I made mop sauce with the bag juices and my sauce. Turned out way better than such a mistreated roast was expected to.

You are not wrong! On the recommendation of a doctor I started seeing, I started eating gluten again. It's been a few years now with no change. Seems gluten was not the issue. And pizza is one of the things I missed the most.

Glad you’re feeling better. My wife has celiac. Traditional pizza (max gluten fully developed) is a real challenge.
