Norwegian salmon with sauteed tomatoes, peppers & garlic over Basmati rice. All cooked in butter and Sicilian olive oil. I usually buy Spanish olive oil from Aldi's, but they haven't had for a few months so I tried their Sicilian olive oil and it is really good. Think I prefer it to the Spanish.
We had BTAs (bacon, tomato & avocado) the night before (off lettuce until this cyclospora thing has run its course). Made a boule of 'peasant bread' for the sandwiches.

Miso salmon is an easy meal for any night of the week but it gets taken to a whole other level here with the additions of grapefruit and honey. Combining the zest and juice from the grapefruit with honey, miso and a bit of ginger gives the fish a sticky-tangy finish when broiled.

Lemon and Garlic Chicken With Cherry Tomatoes Recipe • 5★
This is a summery dish you can make any time of year since decent cherry tomatoes are available in the markets all year long. Boneless chicken breasts are marinated in lemon juice, olive oil, garlic and rosemary before pounding them.
Last night it was linguine with meat sauce topped grated parmesan. Italian pasta, diced tomatoes & organic beef from Aldi's. Glass of rose.

Tonight's dinner is Gulf shrimp, breaded & fried in peanut oil; with sauteed broccolini and something I call "pizza spaghetti".
Pizza spaghetti is something I invented. It is thin spaghetti with all the stuff you might put on top of a slice of pizza. Grated parmesan, red pepper flakes, fresh oregano, fresh basil, minced garlic, all tossed together haphazardly!

Been there, done that. My favorite spaghetti sauce lately has been the pizza sauce from Aldi doctored up with pizza toppings: pepperoni, olives, mushrooms, etc.
Another vote for Aldi's spaghetti sauce. It is made locally and one of my neighbor's is the company VP that runs the plant. Living in the "Garden State" in the midst of the truck farms and orchards has it upside (though we had a hard freeze late in the spring that caused havoc with the peaches and a couple of other crops).

The spaghetti I made was just the seasonings which go on top of a slice of pizza. There is no sauce of any kind; it's a side dish.
