Pork ribs tonight. Can't wait to throw these on the Weber. Worcestershire sauce, garlic, white pepper, onion powder, fresh parsley, sugar, and lemon juice.
I never thought of separating the ribs before cooking. Will definitely give that a try next time.
 
I like to trim a little bit of the fat off beforehand. It takes a good knife, of course though. Kind of a pain. The beauty of it is that you can just take em off the grill and start eating immediately :biggrin:
This way you can easily test the food for doneness. A good Chef always tastes the food before serving, right,... right? ...nudge, nudge
 
Pounded a chicken breast until it was about 1/3" thick, seasoned and added some grated parmesan, and fried in butter & olive oil with garlic, tomatoes & peppers, along with the best local corn we've had in years. Every ear we've had thus far has been excellent. No local peaches to speak of, but the corn is terrific.

3rd gen Performer - very nice. I’m on my second a 2nd gen Performer. Rotted through the bowl of the 1st gen. No 2’s vents are just starting in spots. With the daily salty ocean breeze the ash is acidic as soon as it’s ash. I get about 15 years to the Weber. Still on the 1st rotisserie!

Most people who live in CA have heard about Lockeford Sausage. They are located in a small town about 35 miles from here, and have a huge following. Wifey was in the neighborhood, so she stopped and picked up some of their best. She went for the Smoked Dakota and Hawaiian Aloha - superb on the grill.

We used to drive through Lockeford on the way to Lake Camanche, so probably passed it dozens of times without stopping. Will have to check it out sometime...

I wonder whether their chorizo is the hard Spanish style, or the soft Mexican style?
